Cheese & Sweetcorn Quiche

Eggs, cottage cheese, cream cheese, parmesan, sweetcorn, salt and pepper.

  1. Stir four eggs in a mixing bowl.
  2. Add cottage cheese, cream cheese, parmesan, salt, pepper, and sweetcorn.
  3. Pour into a pie dish and bake at 180C for 45 minutes.

Magic Beans & Tortillas

White beans, red beans, tomato puree, cumin, paprika, tortillas, and fun toppings.

  1. Drain and wash the beans, then add them to a saucepan with water.
  2. Stir in tomato puree, cumin, paprika, salt, and pepper.
  3. Simmer, then let everyone roll their own tortilla with toppings.

Jacket Potatoes with Protein Fillings

Potatoes plus tuna mayo, cottage cheese, cheddar, sweetcorn, baked beans, or date syrup.

  2. Bake at 180C until soft.
  3. Set out toppings in bowls so everyone builds their own dinner.

Tuna Cakes

Tinned tuna, eggs, date syrup, and breadcrumbs. Gluten-free crumbs work too.

  1. Mix tuna, beaten eggs, date syrup, and breadcrumbs in one bowl.
  2. Dollop portions onto a lined baking tray.
  3. Bake at 180C for 18 minutes.

Honey Roast Chicken Tray

Chicken, potatoes, carrots, onion, grape juice, olive oil, honey, paprika, salt and pepper.

  1. Scatter onion in a roasting tray and place chicken on top.
  2. Add potatoes and carrots, then pour grape juice over the base.
  3. Season, drizzle, cover, and roast until golden.

Chickpea & Courgette Coconut Curry

Courgettes, onion, chickpeas, coconut milk, tomato puree, garlic, ginger, turmeric and cumin.

  1. Soften chopped onion with garlic, ginger, and spices.
  2. Add courgettes, chickpeas, coconut milk, and tomato puree.
  3. Simmer gently and adjust seasoning to taste.

Baked Tofu in Honey-Soy Sauce

Tofu, honey, soy sauce, garlic powder, salt, pepper, plus optional peppers or chickpeas.

  1. Slice tofu and place it in a small roasting tin.
  2. Mix olive oil, honey, soy sauce, garlic powder, salt, and pepper.
  3. Pour over the tofu, cover, and bake at 180C.

Classic Chocolate Brownies

Eggs, sugar, oil, self-raising flour, cocoa, vanilla, and chocolate chips.
